These advanced courses enable students to build on previous culinary skills by managing Mineral Springs Cafe and participating in monthly catered events. Students learn the management and service skills required for front- and back-of-house roles, with a focus on professionalism, time management, and efficiency. The curriculum covers food science, nutrition, and plating techniques to create visually appealing and nutritious meals.

Graduates are well-prepared for culinary careers, with opportunities to earn industry-recognized credentials. Dual enrollment credit is available through White Mountains Community College (WMCC) and Central Maine Community College (CMCC), with completer status students eligible for up to 8 credits at Keene State College (KSC). ServeSafe Food Handling Certification must be earned during this course.
