Prerequisite: Culinary I and Instructor recommendation.
Students enrolled in this course apply the skills learned in Culinary I and take them to the next level by running our fully-licensed foodservice operation, Mineral Spring Cafe. Students learn the management skills of both the front of the house and back of the house. They work a variety of catering functions: community breakfasts, open houses, faculty meetings, and more. An emphasis is placed on professionalism, time management, and efficiency. Students leave the program with knowledge of food science, nutrition, and diet and are responsible for preparing meals that are as pleasing to the eye as they are to the palate.
Dual enrollment college credit is available through White Mountains Community College (WMCC). Students who earn “completer” status in this program may receive up to 8 college credits at Keene State College (KSC).
